Fried Rice with Squid and Ginger

If you’re not a vegetarian, add smoked brisket to this fried rice (pre-grilled) for extra flavor.
INGREDIENTS
- 400 g cooked long-grain rice (better than yesterday)
- 300–400 g squid fillet
- 2 large eggs
- 3 cm fresh ginger root
- 1 large bunch of green onions
- vegetable oil
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the squid into 1 cm cubes. After 30 seconds, add boiling water. Pat the squid dry after draining the water.
Step 2
Peel and finely chop the ginger. Take the white part of the green onion and cut it with the help of a knife block set. Cut the green part into separate 2 cm pieces.
Step 3
Heat a wok or large frying pan with vegetable oil over high heat, add the ginger and white part of the onion and fry for 30 seconds. Add the squid, mix and immediately add the rice. Stir the rice with the squid continuously for 2 minutes.
Step 4
Break the eggs directly into the rice, and salt, sprinkle with green onions, and fry over high heat, stirring constantly, so that the eggs are evenly distributed fry for 3 minutes. Serve immediately.
